The joys of cooking

Hello, My name is Lucy Tobias. I like to cook. A lot. Everyone has a power place. Mine is in the kitchen. I’m not the best at cooking for myself but cooking for other people - well, that’s exciting. Somehow Anne MacKay with the Congregational Care Committee knew this - that’s why she asked me to coordinated cooking meals for people in need - those times when people come home from the hospital or there is a death in the family or if they just need the comfort of home cooked meals. We’re pretty flexible. We get together once a month in the church kitchen, bring recipes and ingredients, cook for a few hours then freeze the results. We’re ready!

Food, fellowship, fun. Like to cook? Give us some recipes that freeze well. We’ll let you know when the next cooking session is, maybe you’ll join us in the kitchen.

    Hi Lucy, I think this is a great idea! Count me in to help prepare the meals. There are many foods that freeze well and are delicious for quick meals.

    Spicey French Lentils with Sausage Soup

    One rainy winter evening we got so cold that our toes were aching. We needed something tangy and warm to heat us up on the inside. This is what came out:

    1 tablespoonsweet cream butter
    2 large carrots chopped
    2 large stalks celery chopped
    Teaspoon cumin
    Dash black pepper
    1/2 teaspoon paprika
    Dash cayenne pepper
    1 lb sweet Italian pork sausage
    3 cups low salt chicken broth
    1 1/2 cups dry French Lentils
    Grated Parmesan Reggiano for a topping

    This is a simple sauté-and-broth soup that is ready in less than 30 minutes. In a good heavy-bottom stockpot melt the butter and add carrots, celery and dry spices. Sauté over high heat for about 5 minutes until the vegetables begin to cook and the spices become fragrant. Chop the sausage on a cutting board and then add it into the sauté. Cook the sausage over high heat with the vegetable mix for another 5 minutes until it has browned well. The sausage, however, does not have to be fully cooked, as the broth will finish cooking it. Add in chicken broth and French lentils. Bring to a boil and then reduce heat to medium low. Cover with a lid and cook for another 15 to 20 minutes until lentils are softened but not mushy. Serve immediately and top with grated cheese for extra flavor. This soup also stores well in the refrigerator for up to a week. In fact, it’s often better after a day or two in the fridge.

    I love the idea of blog capabilities on our church website. I can’t wait to get some teasers from Jean and Lucy to publish in the bulletins. This should get other web users involved with fellow church members in a very new and fun way.

    I cannot wait for the Presbyterian Woman’s Cookbook. It was so much fun being on the sidelines when it was being planned and put together. I bet Margy and company think it was fun too - now that all the hard work is finished!

    Lucy and her team of cooks are wonderful. What a relief that we have made ahead meals to bring to those in need rather than people scrambling around to prepare something at the last minute.
